BBQ Grilled Shrimp

BBQ is an important part of the American culture, and no matter what the event is Americans would love having those smoky, scrumptious delicacies. The ability of a grill to provide succulent food with rich flavors is what makes people go crazy about grilling. In my family, we all are fond of grilled food, which is why I bought one of the best ceramic grills available on the market right now. However, I’m not grilling those arteries clogging ribs, steaks and briskets on the grill because I don’t like to compromise on health for taste.

If you too like grilling and are looking to have something unusual, something that is healthy, then I’m going to share two recipes with one involving shrimp kebabs and other involving cucumbers. Both recipes will be cooked on the grill, and I guarantee you that you are going to feel refreshed after having these two recipes.

Let’s start with the first recipe. The name of the recipe is ‘Fiesta Lime Shrimp Kebabs’.

Ingredients that you’d be requiring for the recipe are as follows:

Ingredients:

  • 1 lb shrimp peeled and deveined
  • ½ teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon crushed dried oregano
  • ½ teaspoon salt
  • 1/8 cup of freshly squeezed lime juice
  • 1/4 cup of vegetable oil

Preparation Time: 10 minutes

Cooking Time: 10 minutes

Total Time: 20 minutes

Servings: 6 Persons

Method:

  1. Take a medium sized bowl and all the ingredients except shrimp.
  2. Whisk until all ingredients are mixed properly.
  3. Now, place the shrimp in the bowl and stir to coat.
  4. Put the bowl in the refrigerator for 30 minutes to 2 hours.
  5. Take out the bowl and thread shrimp on half a dozen skewers.
  6. Heat the ceramic grill to medium heat. Place the skewers on the grill.
  7. Let one side cook for 3-5 minutes, then flip to the other side and grill for another 3-5 minutes or until the shrimp are thoroughly cooked.

Your grilled shrimp recipe is now ready.

The second recipe is extremely delicious and will also complement the first one. Name of the recipe is ‘Grilled Cucumbers With Creamy Pickled Feta Dip’ and here are the ingredients that you will be needing for it.

Grilled Cucumber

Ingredients for Grilled Cucumbers:

  1. 10 Kirby or baby cucumbers.
  2. 1/3 cup olive oil.
  3. 1/3 cup red wine vinegar.
  4. 2 tbsps., minced garlic.
  5. A pinch of salt.

Ingredients for Pickled Feta Dip:

  • 6 ounces plain non-fat yogurt.
  • 1 ½ tsp sugar.
  • 1/3 cup water.
  • 1/3 white wine vinegar.
  • 1 tbsp chopped dill.
  • 1 small clove garlic, minced.
  • ½ cup feta cheese, crumbled.

Method:

  1. We are going to start with the preparation of pickled feta dip. For that, take a small bowl and add sugar, water, salt, and vinegar. Mix all the ingredients well until salt and sugar get properly dissolved.
  2. Add feta cheese crumbs in the bowl and let all mixture settles down for half an hour. Once feta cheese is all pickled up, drain the juice and set the cheese aside.
  3. Now, it’s time to blend yogurt, feta cheese, garlic, and dill, so take out your food processor and add all the ingredients. Blend until you get a creamy mixture.

Grilling Cucumbers:

  1. Cut all the cucumbers in half, lengthwise, and again in half.
  2. Take a large bowl and add garlic, olive oil, vinegar and salt in it. Stir the mixture and then, add cucumbers. Make sure that the coating properly covers the cucumbers. Keep the marinade aside for 10 to 15 minutes.
  3. Heat the grill to medium heat and place cucumbers on. Grill cucumbers for 10 minutes, flipping halfway through.
  4. Once you see the cucumbers are properly grilled, put them in a plate and serve with pickled feta dip.
