Veg Mayo Sandwich
This is a simple veg Mayo sandwich recipe that can be prepared in a few minutes with easily available ingredients. You can prepare it either for your breakfast or as an evening snack. This recipe made with fresh vegetables and mayonnaise is delicious and healthy too. Remember to get the right consistency of mayonnaise as it easily gets spoil in hot and humid weather. The main ingredient to prepare the veg mayo sandwich is white bread as it is used to prepare the sandwich. Optionally, you can even use brown bread or multi grain bread instead of white bread.
You can either use the toasted bread or without toasting it to prepare the veg mayo sandwich. You need a variety of vegetables and mayonnaise. You can even prepare mayonnaise at home.

Ingredients Required:
- Bread slices: 6
- Mayonnaise: 3 tablespoon
- Lemon juice: 2 tablespoon
- Pepper powder: 1/4 teaspoon
- Chilli flakes: 1 pinch
- Oregano: 1 pinch
- minced garlic clove: 1
- butter: 3 teaspoons
- ground mustard seeds: 1/4 teaspoon
- Salt: as required
- chopped onion: 3 tablespoons
- chopped capsicum: 1/4 cup
- grated carrot: 2 tablespoon
- boiled sweet corn: 2 or 3 tablespoons
- Chopped cabbage: 2 tablespoons
- finely chopped coriander: 1 tablespoon
- chopped chilli: 1
Procedure:
Step 1: Take a bowl and add the chopped onion, cabbage, chilli, capsicum, boiled sweet corn, grated carrot, minced garlic clove, salt, pepper powder, mayonnaise, and lemon juice. Now mix them until they are combined well.
Step 2: Take two bread slices and spread a thin layer of mayonnaise. Then spread a thick layer of the veg mixture. Top the mixture on the bread slice with a little oregano, chilli flakes, chopped coriander, and ground mustard seeds. Finally, cover this with another bread slice that is applied with mayonnaise.
Step 3: Do the same process with the remaining bread slices and press them slightly. Keep them aside.
Step 4: Heat a non-stick pan on low flame. Apply butter to outer part of both the bread slices and place the sandwich on the pan and heat until it turns golden brown. Press the sandwich with a spatula and cook for a minute.
Step 5: Once the sandwich turns golden brown on one side, carefully turn the sandwich to heat the other side of it until golden brown. Heat the remaining sandwiches in the same way.
You are now ready with veg mayonnaise sandwich! If you want you can cut the veg mayo sandwich diagonally and serve hot. Yummy! Delicious veg mayo sandwich is ready.
