Spicy Magic Sauce is prepared with many spices to keep your tongue on fire. This sauce will go well with almost all salads and sandwiches before you start spreading veggies on your bread. I mostly prepare this sauce in more quantity and keep it aside. I include it almost every day in breakfast.

Ingredients:

  • 1 teaspoon fresh thyme leaves
  • 1 well-crumbled bay leaf
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh rosemary leaves
  • 1 teaspoon fresh oregano leaves
  • 1/2 cup extra-virgin olive oil
  • 1/4 teaspoon + fine grain sea salt
  • 2 medium cloves of garlic, smashed into a paste
  • 2 teaspoons sweet paprika
  • pinch of red pepper flakes

Procedure:

Step1: Take a pan or skillet and warm the olive oil over medium-low heat till it gets hot.

Step2: While the oil is lightly pounding after heating, add the thyme, oregano, rosemary in a pestle and mortar.

Step3: Stir the bay leaf, garlic, red pepper flakes, salt and paprika into the oil.

Step4: Add the lemon juice and bruised herbs.

Step5: The oil gets better as it ages over a few days.

Step6: Keep it in the refrigerator for up a week or ten days.

When it is cold, it will become thicker.

Place it in the sun or in a warm place for a few minutes if you need it in a liquid state.

Finally, your sauce is ready to serve.
