Ingredients
- 1.5 cups of full fat coconut milk with 1 can
- ⅛ teaspoon salt
- 1.5 tablespoons corn starch
handful (10 or so) sprigs of mint - ⅓ cup sugar
Chocolate Sauce:
- 1 teaspoon agave syrup
- 1 teaspoon coconut oil
- 4 ounces dark baking chocolate and chop it
- tiny pinch of salt
Procedure:
- Take a small bowl and mix 1/4 cup of coconut milk along with the corn starch
- Whisk till it gets soluble
- Heat the remainder of the coconut milk over low heat by adding sugar to it
- Stir it till sugar dissolves
- Put it in a small saucepan
- Whisk in the mint the and cornstarch mixture
- Simmer it to low and stir it for few minutes
- Cover the pan after removing it from heat
- Leave it to steep for 20 minutes around
- Now place it in fridge until chilled for 30 minutes
- It gets chilled faster if you transfer it to a shallow dish
- Strain the mint and take it out
- Follow the directions given on your ice cream maker
- Take simmer water in a small saucepan for the chocolate sauce
- To create a double boiler place a glass bowl on top
- If a bowl is big it doesn’t touch the water in the pan
- Stir coconut oil, chocolate till it gets melted using a rubber spatula
- Take it out from heat
- Set it aside till you’re ready to have it
- Store it at room temperature for 3 days.
Notes:
- Chill in the freezer for 30 minutes before serving if it’s too soft right out of your ice cream maker.
