Avocado Corn Sandwich
A healthy sandwich layered with buttery avocado, onion, red bell peppers, corn and a sprinkle of pepper and salt. I have used toasted whole grain wheat bread for this particular. On concord, any bread such as focaccia bread, tortilla to make a wrap, baguette, whole bread or pita bread or any regular white would taste great, sour dough bread.
Chop all the veggies finely. Try adding caramelized onions, bell peppers and mushrooms for a different flavor instead of using them fresh.
I used homemade eggless mayonnaise on sandwich. On concord, try adding mustard or sriracha for extra taste.
Homemade mayo spread and avocado will hold everything together. Try this easy-to-throw-together healthy sandwich and I am sure you are going to love it’s flavor. These are the ingredients used in Avocado Corn Sandwich.
INGREDIENTS
- 1 full Avocado, peeled and chopped
- 1 small Finely chopped Red bell peppers
- 2 tablespoon Finely Chopped onion
- 3 tablespoon Corn Kernels
- Salt to taste
- 3-4 tablespoon Homaemade Eggless Mayo
- 4 slices of Wheat Bread
- 1/4 cup Shredded Lettuce
- 1 teaspoon Coarsely crushed black peppercorns
Procedure:
Assemble ingredients
Toasted bread
Chop and toss all the ingredients together in a bowl by leaving mayo and lettuce
Apply mayo on a slice
Top with shredded lettuce
Spoon the avocado mix on top of lettuce
Add some more lettuce
Apply mayo on the other bread
Make a sandwich
