Easter Bunny Cupcakes

A cupcake is a small cake made to serve single person which is baked in aluminium cup or thin paper cup. For large cakes, decorations such as candy, chocolate, fruits etc are applied along with icing. Eating cupcakes makes you feel happy, and get calories that consists of milk and egg.

Ingredients:

Almond-Coconut Cupcakes:

  • 1/2 cup raw almonds
  • 1/2 cup shredded coconut (unsweetened)
  • 1/8 tsp baking soda
  • 1 tsp sea salt
  • 1 cup flour, all-purpose
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 2 Tbsp virgin coconut oil, melted
  • 1/4 tsp cinnamon
  • 1/2 cup non-dairy milk
  • 1 tsp vanilla extract
  • 1/2 cup + 2 tsp apple sauce

  • 1/2 tsp vanilla extract
  • 1 cup organic powdered sugar, sifting optional
  • 1 can of coconut milk, using only the “cream”
  • Plant colors, sprinkles and additional coconut flakes

Procedure:

Take coconut milk and chill it.

Take 2-3 Tbsp of water and blend small green apple in it.

Your apple sauce is ready.

Add 1 tsp fresh lemon juice for acidity to apple sauce.

Preheat oven to 375 degrees and line cupcake tin with cupcake liners.

Add raw almonds and coconut shreds in a mixer jar.

Blend till it gets smooth.

Take the mixture into a large mixing bowl.

Combine baking powder, coconut sugar, flour and salt with the mixture.

Add the vanilla extract melted coconut oil and whisk into the flour mixture.

Add applesauce and cinnamon for better taste.

Make it fluffy and thick batter.

Scoop the batter into the cups.

Bake it for 10 minutes at 375 degrees.

Again Reduce heat to 350 and bake for 10-12 minutes.

Cool the cupcakes before frosting them.

While frosting, add the coconut cream, powdered sugar, and vanilla into a mixing bowl.

Use mixer to blend those in a fluffy manner.

Don’t over blend because the frosting loses its fluffiness.

Take a mixer  into a bowl and place it in the fridge to chill for 20 minutes as well cupcakes cools.

You can also add colors to your cupcakes.

Separate the frosting into smaller containers before placing them in the fridge

Add your favorite colors to the cupcakes after whisking the coloring materials very well.

Place in fridge

Frost the cupcakes

You can roll edges in shredded coconut.
